I loved this in depth look at your writing process, the behind the scenes are always so fun for me to read! I'm very similar to you with anxiety and the need for control. Whenever I'm trying to fully plot a book, it's 10x harder for me to write, it's more fun when the characters lead the show and surprise even me! First draft is always telling the story to ourselves and I love that concept
